2 large ripe bananas mashed
2 tsp vanilla essence
2 eggs
1 cup natural yoghurt
2/3 cup rice bran oil
1/2 cup raw organic sugar or coconut sugar
1 cup Premium Choice almond meal
1/2 cup Premium Choice linseed meal
1 cup green banana flour
2 tsp baking powder
1 cup Premium Choice chopped nuts (walnuts, pecans or macadamias work well)
Note- for a dairy free option use:
2 tbsp. linseeds and 6 tbsp. water whisked together for egg replacement
1 cup coconut or dairy free yoghurt
Pre-heat oven to 180 degrees Celsius.
Blend wet ingredients except for mashed banana.
Mix dry ingredients together.
Combine wet and dry ingredients being careful to not over over mix.
Combine mashed banana and half of the nuts.
Pour into a greased and lined loaf pan.
Sprinkle the remaining chopped nuts on top.
Bake 45 to 50 minutes until a toothpick comes out clean or golden brown.
