Edible Cookie Dough (with Almond Meal + Cottage Cheese)

High in protein, naturally sweetened, and completely safe to eat raw thanks to no eggs or raw flour.

Ingredients (makes ~4 servings)

  • 1 cup almond meal
  • 1/2 cup cottage cheese (smooth or blended)
  • 2–3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 2 tbsp almond butter (or peanut butter)
  • 2–4 tbsp milk (of your choice as needed for texture)
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips (or chopped 70% chocolate)

Optional add-ins:

  • Chia seeds (1 tsp for fibre boost)
  • Crushed pistachios
  • Cinnamon pinch
  • Protein powder (vanilla works well, reduce almond meal slightly)

Method

  1. Blend cottage cheese until completely smooth (important for texture).
  2. In a bowl, mix almond meal, salt, and optional protein powder.
  3. Add blended cottage cheese, almond butter, maple syrup, and vanilla.
  4. Stir until a dough forms. Add milk 1 tbsp at a time if too thick.
  5. Fold through chocolate chips.

Texture Tip

If you want a real cookie dough feel, slightly under-blend the cottage cheese so it stays creamy but not runny.
