Enza's Premium Choice Dairy Free Banana Bread


-          1 cup Premium Choice natural almond meal

-          1 cup Premium Choice walnuts or pecans, chopped

-          1 cup Premium Choice natural oat bran

-          ¾ cup Premium Choice Australian linseed meal

-          ½ cup Coconut oil, melted

-           ½ cup Maple syrup

-          2 teaspoons Vanilla bean paste

-          4-5 Ripe bananas, mashed

-          2 teaspoons Baking powder

-          1 teaspoon ground cinnamon

-          Pinch of nutmeg

-          Pinch of sea salt flakes


1.      Preheat oven to 180°C .

2.      Grease and line a medium sized loaf tin. 

3.      Combine almonds, salt, nutmeg, cinnamon, baking powder, oat bran, linseed meal, walnuts or pecans in a bowl.

4.      In a separate bowl combine coconut oil, maple syrup, vanilla bean paste and bananas.

5.      Add the wet ingredients to the dry ingredients and mix. Be careful not to overmix the mixture.

6.      Pour into baking tin and bake for approx. 40 minutes.

7.      Reduce temperature to 160°C, rotate tin and apply a piece of baking paper to the top of loaf to prevent burning.

8.      Bake for a further 30-40 minutes, until a skewer inserted in the centre comes out clean and the top is golden.

9.      Cool in tin.

10.   Remove loaf and serve with ricotta or Greek yoghurt and top with fresh banana.

11.   Enjoy!

*Keeps for up to a week in an airtight container in the fridge, or slice and freeze for up to one month.
