Premium Choice Gluten Free Quinoa Berry Muffins


1 ½ cups Premium Choice Quinoa Flour Pinch of sea salt

2   tsp of g/f baking powder

¼ tsp of cinnamon

½ cup of raw sugar Zest of one large lemon

¼ cup of olive oil 1 large egg 1/3 cup of milk

1 tsp vanilla extract

1 cup berries (frozen or fresh)

Cream cheese filling:

  3 Tbsp. cream cheese

   1 tsp of lemon zest

   1 Tbsp. raw sugar



1.      Preheat oven to 200°C and line a muffin tin with patty pans

2.      Whisk together the Premium Choice Quinoa Flour, salt, baking powder and cinnamon in a bowl

3.      In a separate bowl, add the sugar and lemon zest and rub them together using your fingers. Then add to the flour mixture

4.      In another bowl, add the olive oil, egg, milk and vanilla extract

5.      Pour the wet ingredients into the quinoa flour mixture and mix until just combined

6.      Fold in the berries

7.      In a separate bowl, combine the cream cheese, lemon zest and sugar

8.      Fill each patty pan half way with the batter and add a teaspoon of the cream cheese filling in the middle of each. Add the other half of batter to cover the cream cheese filling

9.      Bake muffins for approx. 20 minutes or until muffins are golden brown and a skewer comes out clean

10. Let cool on a wire rack

11. Enjoy!
