Premium Choice Gluten Free Strawberry Buckwheat Pancakes


*makes 6 medium pancakes

½ cup Premium Choice Buckwheat Flour

1 large egg

1/3 cup milk (dairy free or dairy)

½ tsp baking powder

Strawberries sliced

1 tsp coconut oil  for cooking

1 tbsp. of xylitol (or raw sugar)


 1.      Whisk together the egg and milk

2.      Add the buckwheat flour, xylitol and baking powder and whisk until smooth (batter should be thick but pourable - add a touch more liquid if too thick).

3.      Heat a frying pan on low-med heat and add coconut oil

4.      Pour mixture into pan at desired pancake size

5.      Place some sliced strawberries into the cooking pancake batter and cook until nicely golden on the bottom

6.      Flip over and cook on the other side until golden

7.      Transfer to a plate, fruit side up.

8.      Enjoy with some maple syrup or any other topping you desire!

*Feel free to mix it up and include chocolate chips and other dried fruits in the batter *
