Burghul is a key ingredient in tabouli and kibbeh, and can be used in soups, stuffing, burgers and casseroles. It is traditionally used as a side dish in place of couscous or rice.
How to prepare Burghul:
SOAK
To prepare, place Burghul in a heatproof bowl, and cover with boiling water.
Set aside for 10-15 minutes, or until water is absorbed and the grains are light and fluffy.
Fluff with a fork.
COOK
To prepare, add Burghul to water.
Bring to the boil, and then reduce the heat.
Cover and simmer for 15-20 minutes until liquid is absorbed.
Fluff with a fork.
The preparation of Burghul is similar to the preparation of Cous Cous.
